INGREDIENTS
. 100 gr Quinoa
. 2 Avocado
. 200 gr Datterini cherry tomatoes
. extra virgin olive oil to taste
. salt to taste
. fresh parsley to taste
INSTRUCTIONS
1 Pass the quinoa under running water using a sieve, this procedure will allow you to eliminate the bitter taste released by the saponins.
2 Toast the quinoa in a pan for about a minute, with extra virgin olive oil, making sure that the flame is medium-high.
3 Move everything into a saucepan and place a portion of quinoa (previously toasted) and two parts of salted water.
4 Cook over medium-high heat until the quinoa has absorbed all the water (usually after 15 minutes). Turn off and let it sit for another 5 minutes.
5 Season with diced cherry tomatoes and diced avocado, sprinkle with a drizzle of extra virgin olive oil and complete with a handful of chopped fresh parsley.
